So it seems when you have a post that is save as a draft, when you go to publish it, it slots in when you started it, not when you finished it...hmm!...so: if you want, scroll down for that one.
go to edit the post and you'll see "post options" below the labels box. click on that, then can set post date time to whatever you want and set in past / future too.
